  • 4-6 pieces chicken drumsticks (skin-on or skinless) Skin-on for extra flavor.
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon smoked paprika Regular paprika can work too.
  • 1 cup chicken broth Or vegetable broth for a vegetarian option.
  • 1 cup heavy cream or coconut cream Coconut cream for a lighter option.
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)
  • 1 cup steamed rice, cooked To serve with the chicken.

Method
 

Cooking Steps
  1. Heat a large skillet over medium heat and add olive oil.
  2. Season the drumsticks with salt, pepper, and smoked paprika. Once the oil is hot, sear the drumsticks for 5-7 minutes on each side until golden brown.
  3. Remove the drumsticks from the skillet and set aside. In the same pan, sauté diced onion for 3-4 minutes until translucent. Add minced garlic and sauté for an additional minute.
  4. Sprinkle smoked paprika over onions and garlic, stir to combine, and then slowly pour in chicken broth, scraping any browned bits from the pan. Bring to a gentle simmer.
  5. Lower the heat and stir in heavy cream or coconut cream. Return chicken drumsticks to the skillet, cover, and simmer for 20-25 minutes or until cooked through.
  6. Prepare steamed rice according to package instructions and keep warm until serving.

Notes
