Pasta Base
  • 8 oz pasta (any shape you love) Gluten-free pasta can be used.
Sauce Ingredients
  • 1 cup peas (fresh or frozen) Frozen peas need only a minute to heat through.
  • 2 tablespoons butter (or olive oil for a lighter touch) Use olive oil for a lighter version.
  • 1 cup heavy cream Substitute with coconut milk for a vegan option.
  • 1/2 cup grated Parmesan cheese Use nutritional yeast for a vegan option.
  • 1 teaspoon garlic powder (or fresh minced garlic) Fresh garlic enhances flavor.
  • to taste Salt and pepper Adjust seasoning to preference.
  • optional Fresh parsley, chopped For garnish.

Method
 

Preparation
  1. Boil a pot of salted water. Add pasta and cook until al dente, about 8 to 10 minutes, stirring occasionally.
  2. In a pan, melt the butter over medium heat. If using fresh garlic, sauté until fragrant, about 1 minute.
Cooking
  1. Pour in the heavy cream and let it simmer on low heat for a couple of minutes until it thickens.
  2. Add the peas into the sauce and heat for a minute if using frozen.
  3. Drain pasta, reserving some starchy water. Toss pasta into the cream sauce, mixing until coated. Adjust sauce with reserved water if too thick.
  4. Stir in Parmesan cheese, garlic powder, salt, and pepper to taste.
