Ingredients
  

Pasta and Sauce Base
  • 12 oz rigatoni pasta or any pasta you prefer
  • 1 lb Italian sausage feel free to use spicy or sweet
  • 1 cup heavy cream for vegan, opt for coconut cream
  • 1 cup chicken or vegetable broth whatever you have on hand
  • 1/2 cup grated Parmesan cheese nutritional yeast for a vegan alternative
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning or your favorite herbs
  • Salt and pepper, to taste
  • Olive oil, for sautéing
  • Red pepper flakes (optional) for a hint of heat
Vegetables
  • 2 cups fresh spinach kale is a nice swap

Method
 

Cooking Pasta
  1. Bring a pot of salted water to a boil and cook the rigatoni according to the package directions, usually about 10-12 minutes, until al dente. Drain and set aside, reserving about a cup of pasta water.
Cooking Sausage
  1. In a large skillet, heat a drizzle of olive oil over medium-high heat. Crumble in the Italian sausage and cook until it's golden and cooked through, about 5-7 minutes. Stir occasionally.
  2. Add the minced garlic and Italian seasoning, cooking until fragrant—about a minute.
Creating Sauce
  1. Pour in the chicken or vegetable broth and heavy cream, letting the mixture come to a gentle simmer. Allow it to thicken slightly while stirring, about 3-4 minutes.
Combining Ingredients
  1. Add the cooked rigatoni, tossing it gently to combine with the sauce. If it looks too thick, gradually add some reserved pasta water to achieve desired consistency.
  2. Fold in the spinach until it just wilts, then season with salt, pepper, and optional red pepper flakes.
Serving
  1. Finish with a sprinkle of grated Parmesan cheese, allowing it to melt into the sauce, and serve hot.
