  • 8 ounces fettuccine or your favorite pasta
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream (or half-and-half for a lighter option)
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon fresh lemon juice (or to taste)

  • Optional: Red pepper flakes for a kick

Method
 

Cooking Pasta
  1. Bring a large pot of salted water to a boil and cook fettuccine according to package instructions until al dente.
  2. Reserve about a cup of pasta water, then drain the rest and set aside.
Cooking Shrimp and Sauce
  1. In a large skillet over medium heat, heat olive oil and sauté minced garlic until fragrant, about a minute.
  2. Add the shrimp to the skillet and cook until they turn pink and curl up, around 3-4 minutes. Remove shrimp and set aside.
  3. Pour the heavy cream into the pan and bring to a gentle simmer, then add Parmesan cheese and stir until melted and combined.
  4. If the sauce is too thick, add some reserved pasta water until you reach the desired consistency.
  5. Stir in lemon juice, return shrimp to the skillet, and mix well.
  6. Toss in the cooked pasta, ensuring it gets well-coated with sauce. Season with salt, pepper, and optional red pepper flakes.
Serving
  1. Garnish the pasta with fresh parsley before serving.
