Preparation
- Preheat your broiler. Line a baking tray with parchment paper, and place the salmon fillets on top.
- Drizzle salmon with olive oil, lemon juice, and sprinkle with salt, pepper, and red pepper flakes. Broil for about 8-10 minutes, or until cooked through.
Cooking the Pasta and Sauce
- Bring a large pot of salted water to a boil and cook the fettuccine according to package directions. Reserve about a cup of the pasta water before draining.
- In a large skillet, heat a tablespoon of olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add fresh spinach and sauté until wilted, around 3-4 minutes.
- Pour in the heavy cream, stirring to combine. Add grated Parmesan cheese and let it simmer for about 2-3 minutes until the sauce thickens. If it’s too thick, gradually add reserved pasta water to reach desired consistency.
- Mix in the cooked fettuccine until well coated in the sauce.
Serving
- Place a broiled salmon fillet atop a generous portion of creamy spinach fettuccine. Enjoy!
