Preparation
- Preheat your oven to 400°F (200°C).
- Season the salmon fillets with salt and pepper.
Cooking
- In a large oven-safe skillet, heat the olive oil over medium-high heat.
- Once shimmering, add the salmon, skin-side down if applicable, and sear for about 4-5 minutes until golden brown.
- Carefully flip the salmon and add minced garlic to the skillet. Sauté for another minute until fragrant.
- Pour in the heavy cream and stir in the sun-dried tomatoes.
- Toss in the spinach and let it wilt, stirring everything together.
- If using Parmesan, fold that in for extra richness.
- Gently scoot the salmon into the sauce and slide the skillet into the preheated oven for about 10-12 minutes.
- The salmon is ready when it flakes easily with a fork and is opaque throughout.
- Sprinkle chopped basil on top and serve with lemon wedges.
