Creamy Tuscan Mushroom Pasta Skillet

Ingredients
  

Pasta and Sauce Ingredients
  • 8 oz pasta (fettuccine or penne)
  • 2 cups mushrooms, sliced (cremini or button)
  • 2 cups fresh spinach, roughly chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream (or coconut milk for dairy-free)
  • ½ cup grated Parmesan cheese (plus more for serving)
  • 2 tbsp olive oil
  • to taste Salt and pepper
  • optional Fresh parsley for garnish and a squeeze of lemon juice Adds brightness to the flavors.

Method
 

Cooking the Pasta
  1. Bring a pot of salted water to a boil and cook the pasta according to the package instructions until al dente, about 8-10 minutes.
Preparing the Sauce
  1. While the pasta is cooking, heat olive oil in a large skillet over medium heat.
  2. Add the sliced mushrooms and sauté for about 5-7 minutes until golden and slightly caramelized.
  3. Add the minced garlic and cook for another minute until fragrant, being careful not to burn it.
  4. Add the fresh spinach and stir, allowing it to wilt down for 2-3 minutes.
  5. Pour in the heavy cream, stirring to combine. Allow to simmer on low for about 5 minutes until the sauce thickens slightly.
  6. Add grated Parmesan cheese and mix until melted into the sauce. Adjust seasoning with salt and pepper to taste.
Combining and Serving
  1. Reserve about ½ cup of pasta water, then drain the pasta and add it to the skillet of creamy sauce.
  2. Toss everything together, adding reserved pasta water if the sauce is too thick.
  3. Serve immediately with an extra sprinkle of Parmesan and fresh parsley.
