Creamy Tuscan Shrimp and Spinach Pasta

For the Pasta
  • 8 oz fettuccine or linguine Use your favorite pasta shape
For the Creamy Sauce
  • 1 lb large shrimp, peeled and deveined Substitute with chicken or tofu for a twist
  • 2 cups fresh spinach Can be substituted with kale
  • 1 cup heavy cream Use coconut cream for a vegan alternative
  • 1 cup cherry tomatoes, halved
  • 3 cloves garlic, minced
  • 1 small onion, diced
  • 2 tablespoons olive oil
  • 1/2 teaspoon red pepper flakes Adjust based on heat preference
  • 1 teaspoon Italian seasoning Or a mix of oregano, basil, and thyme
  • to taste Salt and pepper
  • to taste Fresh grated Parmesan cheese Omit for vegan
Optional Garnishes
  • to taste Fresh basil, chopped
  • to taste Extra Parmesan for serving
  • to taste Lemon wedges For a zing

Method
 

Cooking the Pasta and Sauce
  1. Bring a large pot of salted water to a boil for your pasta.
  2. Heat a generous splash of olive oil in a large skillet over medium heat.
  3. Sauté the diced onion until translucent, about 3-4 minutes.
  4. Add the minced garlic and red pepper flakes, cooking for another 30 seconds.
  5. Add the shrimp and cook until they turn pink, roughly 3-4 minutes.
  6. Stir in the halved cherry tomatoes and fresh spinach, cooking until the spinach wilts (around 2 minutes).
  7. Pour in the heavy cream and sprinkle in the Italian seasoning. Let simmer until thickened.
  8. Drain the cooked pasta and add it to the sauce, tossing to coat. Season with salt and pepper.

Notes

For a spicier kick, add more red pepper flakes or hot sauce. To make it vegan, replace shrimp with tofu and use coconut cream. You can prepare the sauce ahead of time and store it in the fridge.
