For the stew
  • 2 tablespoons olive oil Can swap with avocado oil or coconut oil.
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium carrot, diced
  • 1 medium red bell pepper, diced
  • 14 ounces can diced tomatoes Or 4 fresh tomatoes, chopped.
  • 15 ounces can white beans Like cannellini or navy, drained and rinsed.
  • 1 cup vegetable broth
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes Adjust to taste.
  • to taste Salt and pepper
  • 1 cup coconut milk Or any plant-based milk for a lighter option.
  • to taste Fresh basil or parsley for garnish Optional.

Method
 

Preparation
  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté for about 3-5 minutes until softened.
  3. Toss in the minced garlic, diced carrot, and red bell pepper. Sauté for another 5 minutes.
  4. Incorporate the diced tomatoes and white beans.
  5. Pour in the vegetable broth, sprinkle in the dried basil, oregano, red pepper flakes, and season with salt and pepper. Stir well.
  6. Allow the stew to simmer gently for about 10 minutes.
  7. Stir in the coconut milk and let cook for an additional 5 minutes.
  8. Garnish with fresh basil or parsley before serving.
