Creamy White Bean Dip

  • 2 cans (15 oz each) cannellini or great northern beans, drained and rinsed or 3 cups cooked beans
  • 2–3 tbsp extra-virgin olive oil plus more for drizzling
  • 2 tbsp fresh lemon juice (about 1 lemon)
  • 1–2 cloves garlic, smashed (adjust to taste)
  • 2 tbsp tahini or plain Greek yogurt (optional, for creaminess)
  • 1/2 tsp ground cumin (optional)
  • 1/2 tsp flaky sea salt plus more to taste
  • 1/4 tsp freshly ground black pepper
  • 2–3 tbsp water (to loosen, as needed)
  • 2 tbsp chopped fresh parsley or cilantro for freshness
  • Red pepper flakes or smoked paprika for garnish (optional)

Method
 

Preparation
  1. Scoop the rinsed beans into the bowl of a food processor or blender.
  2. Add the lemon juice, garlic, tahini or yogurt, cumin (if using), salt, and pepper.
  3. Pulse until the mixture begins to come together.
  4. While the motor runs, drizzle in the olive oil through the feed tube until smooth and spreadable.
  5. If too thick or grainy, add water one tablespoon at a time until it loosens.
  6. Taste and adjust with more lemon or salt as needed.
Serving
  1. Spoon the dip into a shallow bowl.
  2. Drizzle with olive oil, scatter chopped herbs, and sprinkle with smoked paprika or red pepper flakes if desired.
  3. Let it rest at room temperature for 15–30 minutes to meld flavors.

Notes

Tahini adds a nutty depth; yogurt gives tang and silkiness (use plant yogurt for vegan). This dip is great served warm or at room temperature with various accompaniments.
