- In a large skillet over medium heat, sauté the onions and bell peppers until tender, about 5 minutes.
- Add the minced garlic and cook for another minute until fragrant.
- Toss in the shredded chicken, cumin, chili powder, salt, and pepper. Mix well and let the flavors meld together for about 4-5 minutes.
- While the filling cools, take the empanada dough out of the packaging and roll them out slightly larger if using round disks.
- Spoon a generous amount of the chicken mixture onto one half of each dough circle, fold the dough over to create a half-moon shape, and press the edges securely to seal.
Cooking
- Preheat your air fryer to 375°F (190°C).
- Lightly spray the empanadas with cooking spray and place them in a single layer in the air fryer basket, cooking in batches if necessary.
- Cook for about 12-15 minutes until golden brown and crispy, flipping halfway through.
Making the cilantro lime crema
- In a mixing bowl, combine sour cream, mayonnaise, lime juice, and chopped cilantro. Stir until well blended and season with salt.
