Ingredients
  

For the salmon bites
  • 1 pound salmon fillets, cut into bite-sized pieces
  • 1 cup breadcrumbs (use panko for extra crunch!)
  • 1/2 cup all-purpose flour (or gluten-free alternative)
  • 2 large eggs
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
For the bang bang sauce
  • 1/2 cup mayo
  • 2 tablespoons sriracha adjust spice to your liking
  • 1 tablespoon honey for a sweet kick
  • 2 pieces green onions, sliced thinly for garnish

Method
 

Preparation
  1. In one bowl, combine the flour, salt, pepper, garlic powder, and paprika.
  2. In another bowl, beat the eggs until they’re uniform.
  3. Place the breadcrumbs in a third bowl to create your assembly line.
  4. Coat each piece of salmon in the seasoned flour, shake off any excess, dip into the eggs, and press into the breadcrumbs to fully cover.
  5. Repeat the process until all salmon bites are breaded.
Cooking
  1. Preheat your oven to 400°F (200°C) or prepare your air fryer according to its instructions.
  2. Arrange the breaded salmon bites on a parchment-lined baking sheet or in the air fryer basket, ensuring they have enough space for even cooking.
  3. Bake for about 12-15 minutes until golden brown and cooked through, flipping halfway if using the oven.
Making the Sauce
  1. In a bowl, whisk together mayo, sriracha, and honey until smooth and well combined.
  2. Taste and adjust the spice, adding lime juice for zest if desired.
Serving
  1. Once the salmon bites are crispy and golden, drizzle or dip them in your bang bang sauce and garnish with sliced green onions.
