For the Dressing
  • 1/2 cup mayonnaise

  • 1 tablespoon Dijon mustard
  • 1 tablespoon Worcestershire sauce

Method
 

Preparation
  1. Season the chicken breasts with salt and pepper generously on both sides.
  2. In a skillet over medium heat, add a drizzle of olive oil. Once hot, sear the chicken for about 5-7 minutes on each side until golden brown and cooked through.
  3. Remove the chicken and let it rest; this helps keep it juicy.
  4. In a bowl, whisk together the mayonnaise, lemon juice, minced garlic, Dijon mustard, and Worcestershire sauce for the dressing.
  5. Taste and season the dressing with salt and pepper until it’s just right.
  6. In a large bowl, combine the chopped romaine, cherry tomatoes, red onion, and croutons.
  7. Slice the chicken into strips and add it to the salad along with the dressing.
  8. Toss everything together until well-coated, ensuring every bite is packed with flavor.
  9. Top with freshly shaved parmesan cheese.
