  • 2 pounds baby potatoes (or any potatoes you prefer) Yukon Gold or any preferred variety can also be used.
  • 4 tablespoons unsalted butter, melted
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese Alternative cheeses like Gruyère or cheddar can be used.
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional for garnish)

Method
 

Preparation
  1. Boil the potatoes in a large pot of salted water until fork-tender, about 15-20 minutes. Drain and let cool slightly.
  2. Preheat your oven to 450°F (230°C). Place the potatoes on a lined baking sheet. Smash each potato to about ½-inch thickness.
Cooking
  1. In a small bowl, mix melted butter, olive oil, minced garlic, salt, and pepper. Brush this mixture generously over the smashed potatoes.
  2. Sprinkle grated Parmesan on top of each potato.
  3. Roast in the oven for about 20-25 minutes until golden brown and crispy on the edges.

Notes
