For the Chicken
  • 2 lbs chicken wings or drumsticks
  • 1 cup buttermilk or plain yogurt Use plain yogurt as an alternative
  • 2 tablespoons soy sauce
  • 1 tablespoon honey Can substitute with maple syrup
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • to taste Salt and pepper
For the Coating

  • 1/2 cup cornstarch
  • 1 teaspoon paprika Optional for color
  • as needed Oil for frying
Optional Garnishes
  • Green onions, finely sliced
  • Sesame seeds
  • Pineapple slices For a Hawaiian twist

Method

Preparation
  1. In a large bowl, mix the buttermilk, soy sauce, honey, sesame oil, garlic powder, ginger powder, and a pinch of salt and pepper. Add the chicken pieces, ensuring they're thoroughly coated in the marinade. Cover and let it sit in the fridge for at least 1 hour or overnight.
  2. Once marinated, let the chicken come to room temperature. In a separate bowl, whisk together the flour, cornstarch, and paprika.
Frying
  1. Heat oil in a large, deep skillet over medium-high heat until it reaches 350°F.
  2. Take each piece of chicken, let excess marinade drip off, and dredge in the flour mixture, ensuring a thorough coating.
  3. Carefully place the coated chicken in the hot oil, fried for about 8-10 minutes or until golden brown and cooked through, turning halfway through. Transfer to a wire rack or paper towel-lined plate to drain excess oil. Repeat with remaining chicken.

For a quick prep shortcut, consider using store-bought buttermilk or a simple egg wash. Adjust cooking time for boneless chicken, and store leftovers in an airtight container for up to 3 days.
