For the Hash Cakes
  • 2 large sweet potatoes, peeled and grated
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour (can substitute with gluten-free flour)
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 large egg, lightly beaten
  • 1/4 cup olive oil for frying
For the Garlic Feta Dip
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup plain Greek yogurt
  • 1 clove garlic, minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Method
 

Preparation
  1. Squeeze any excess moisture from the grated sweet potatoes.
  2. In a large bowl, combine the squeezed sweet potatoes, chopped onion, minced garlic, flour, paprika, salt, pepper, and beaten egg. Stir until well mixed.
Cooking
  1. Heat olive oil over medium heat in a non-stick skillet.
  2. Form the sweet potato mixture into small patties and place them in the pan without overcrowding.
  3. Cook for about 4-5 minutes per side until golden brown and crispy.
Preparing the Dip
  1. In a bowl, combine the crumbled feta, Greek yogurt, minced garlic, lemon juice, salt, and pepper. Mix until smooth and creamy.
  2. Add a splash of water to the dip if desired for preferred consistency.
