Crockpot Spinach Artichoke Dip

Ingredients
  

Spinach and Artichokes
  • 1 package (10 oz) frozen chopped spinach Thaw and drain before using, or substitute with fresh spinach.
  • 1 can (14 oz) artichoke hearts, drained and roughly chopped You could use marinated artichokes for an extra flavor kick.
Creamy Base
  • 1 cup cream cheese, softened Low-fat cream cheese or vegan cream cheese makes for great substitutes.
  • 1 cup sour cream Greek yogurt can also be a delicious alternative.
  • 1 cup mayonnaise For a lighter version, use low-fat mayo or swap with cashew cream for a vegan twist.
Cheeses
  • 1 cup shredded mozzarella cheese Feel free to experiment with other cheeses, like provolone or pepper jack.
  • ½ cup grated Parmesan cheese Nutritional yeast can stand in for a vegan option.
Seasoning
  • 2 cloves garlic, minced If you adore garlic, don’t hesitate to add more!
  • Salt and pepper to taste

Method
 

Preparation
  1. Thaw and drain frozen spinach or sauté fresh spinach until wilted.
  2. In a crockpot, add the prepared spinach and chopped artichokes.
  3. Add softened cream cheese, sour cream, and mayonnaise, spreading the cream cheese for easier mixing.
  4. Sprinkle in mozzarella and Parmesan cheeses along with minced garlic. Season with salt and pepper.
  5. Stir everything until well combined and set the crockpot to low.
Cooking
  1. Let the dip simmer for about 2 to 3 hours, stirring occasionally.
  2. Before serving, stir again and sprinkle more cheese on top if desired.

Notes
