Preparation
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- In a mixing bowl, beat together the softened butter, granulated sugar, and brown sugar until creamy.
- Add in the eggs, one at a time, mixing well after each addition, followed by the vanilla extract.
- In another bowl, whisk together the flour, baking soda, baking powder, and salt.
- Gradually blend the dry mixture into the wet ingredients until just combined.
- Fold in the strawberry jam and chopped fresh strawberries.
- Cover the dough and let it rest in the fridge for about 30 minutes.
Baking
- Scoop generous portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.
- If desired, roll the dough balls in sugar before placing them on the baking sheet.
- Bake for 10-12 minutes, until lightly golden on the edges.
- Let the cookies cool on the sheet for a few minutes before transferring them to a wire rack to cool completely.
