  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour For a lighter cookie, consider a blend of whole wheat flour.
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/2 cup strawberry jam Optional: Use homemade if you prefer.
  • 1/2 cup chopped fresh strawberries Optional for extra flavor and texture.
  • Additional granulated sugar for rolling Optional.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. In a mixing bowl, beat together the softened butter, granulated sugar, and brown sugar until creamy.
  3. Add in the eggs, one at a time, mixing well after each addition, followed by the vanilla extract.
  4. In another bowl, whisk together the flour, baking soda, baking powder, and salt.
  5. Gradually blend the dry mixture into the wet ingredients until just combined.
  6. Fold in the strawberry jam and chopped fresh strawberries.
  7. Cover the dough and let it rest in the fridge for about 30 minutes.
Baking
  1. Scoop generous portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  2. If desired, roll the dough balls in sugar before placing them on the baking sheet.
  3. Bake for 10-12 minutes, until lightly golden on the edges.
  4. Let the cookies cool on the sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For a vegan version, swap butter with coconut oil and replace eggs with a flax egg. They can be stored in an airtight container for about a week.
