Filling
  • 2 cups cooked chicken, shredded or chopped Rotisserie chicken works great!
  • 1 cup shredded cheese Choose cheddar, Monterey Jack, or a blend
  • 1/2 cup salsa Choose your heat level
  • 1 teaspoon cumin Adds depth of flavor
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
Wrap
  • 12 small corn or flour tortillas
  • Olive oil spray or melted butter for brushing This is crucial for achieving a golden-brown crunch
  • Optional toppings: sour cream, guacamole, or extra salsa

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, combine the cooked chicken, cheese, salsa, cumin, garlic powder, and onion powder. Mix well.
  3. Warm the tortillas in the microwave for about 20 seconds.
  4. Place about two tablespoons of the chicken mixture in the center of each tortilla and roll them tightly, tucking in the edges.
Baking
  1. Arrange the taquitos seam-side down on a baking sheet lined with parchment paper.
  2. Spray with olive oil or brush lightly with melted butter.
  3. Bake for 15-20 minutes, or until golden and crispy.
Serving
  1. Let them cool for a minute before serving with your favorite toppings.
