  • 2 large large cucumbers (preferably English or Persian) They are sweeter and crunchier
  • 1 large large sweet onion (like Vidalia or Walla Walla) Soak in cold water for 10 minutes to reduce sharpness if desired
  • 1/4 cup apple cider vinegar Alternatively use red wine vinegar for a different flavor
  • 2 tablespoons granulated sugar Or honey for a more natural sweetness
  • 1/2 teaspoon salt Can be adjusted to taste
  • Fresh herbs (optional) Like dill or parsley for an aromatic twist
  • Pepper To taste

Method
 

Preparation
  1. Slice the cucumbers into half-moons for more surface area and crunch, or into rounds if preferred.
  2. Thinly slice the sweet onion. If soaking, rinse it before adding.
  3. Transfer the cucumbers and onions to a large mixing bowl.
  4. In a small bowl, whisk together the apple cider vinegar and sugar until the sugar is mostly dissolved. Season with salt and pepper to taste.
  5. Pour the dressing over the veggies and toss gently to coat.
  6. Let the salad sit for 15 to 30 minutes to allow the flavors to blend.
