Ingredients

  • 1 medium cucumber, peeled and diced
  • 0.5 cup fresh lime juice (about 4 limes) Freshly squeezed is recommended.
  • 3 tablespoons agave syrup (or honey) Adjust according to your sweetness preference.
  • 1 cup sparkling water For fizz.
  • to taste Salt for rimming glasses (optional)
  • as needed Extra cucumber slices or lime wedges for garnish

Method
 

Preparation
  1. Blend the diced cucumber in a blender until smooth, adding a few tablespoons of water if too thick.
  2. Strain the cucumber puree through a fine mesh sieve into a bowl or pitcher, pressing down with a spoon to extract about half a cup of juice.
  3. In a separate mixing bowl, whisk together the fresh lime juice and agave syrup until fully combined.
  4. Stir the cucumber juice into the lime and agave mixture until well mixed and color lightens.
  5. Pour in the sparkling water and gently stir to combine without losing fizz.
  6. Optionally, rim your glasses with salt by running a lime wedge around the rim and dipping it into salt.
  7. Pour the cucumber margarita into the glasses and garnish with cucumber slices or lime wedges.

Notes
