- Heat a large skillet over medium-high heat. Add a splash of oil and toss in the thinly sliced beef strips. Brown for about 3-4 minutes, stirring occasionally.
- Remove the beef and set it aside. In the same skillet, add chopped onion and cook for about 3 minutes until softened and translucent.
- Add garlic and ginger, stirring for about a minute until fragrant.
- Introduce the mushrooms into the pan and sauté for 5 minutes until golden and tender.
- Add red curry paste to the pan, stirring to evenly coat. Cook for about another minute.
- Pour in the coconut milk, peanut butter, and soy sauce. Stir until the peanut butter melts into the sauce and let it simmer for about 5 minutes.
- Return the beef to the skillet and bring everything to a gentle boil. After a couple of minutes, squeeze in lime juice and stir.
