Dry Ingredients
  • 1 cup all-purpose flour (or whole wheat flour) for a heartier version
  • 1 cup rolled oats
  • 2 medium grated carrots approximately 1 cup
  • 1 medium grated apple approximately 1 cup
  • 1/2 cup shredded coconut unsweetened, optional
  • 1/2 cup walnuts or pecans chopped, optional
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup maple syrup or agave nectar for sweetness
  • 1/2 cup unsweetened applesauce
  • 1/4 cup almond milk or any non-dairy milk of your choice
  • 1/2 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it with a little olive oil.
  2. In a large mixing bowl, combine the flour, oats, baking powder, baking soda, cinnamon, and salt. Whisk them together until well combined.
  3. In another bowl, mix together the grated carrots, grated apple, maple syrup, applesauce, almond milk, and vanilla until just blended.
Baking
  1. Pour the wet mixture into the dry ingredients and fold gently to combine. Optionally, fold in the shredded coconut and chopped nuts.
  2. Scoop the batter into the prepared muffin tin, filling each spot about 3/4 full.
  3. Bake the muffins for 20-25 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  4. Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack.
