Preparation
- Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it with a little olive oil.
- In a large mixing bowl, combine the flour, oats, baking powder, baking soda, cinnamon, and salt. Whisk them together until well combined.
- In another bowl, mix together the grated carrots, grated apple, maple syrup, applesauce, almond milk, and vanilla until just blended.
Baking
- Pour the wet mixture into the dry ingredients and fold gently to combine. Optionally, fold in the shredded coconut and chopped nuts.
- Scoop the batter into the prepared muffin tin, filling each spot about 3/4 full.
- Bake the muffins for 20-25 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack.
