  • 1 cup dark chocolate chips For a dairy-free option, use vegan chocolate.
  • 1 tablespoon coconut oil For easy melting.

Optional substitutions

Method
 

Preparation
  1. Place the Medjool dates in a mixer and blend until they form a sticky paste.
  2. If dates are stubborn, soak them briefly in warm water to soften.
  3. In a large mixing bowl, combine the date mixture with nut butter, mixing until smooth.
  4. Fold in the chopped nuts; it's fine if some bits are smaller or larger.
  5. Line an 8x8 inch baking dish with parchment paper and press the mixture into an even layer.
Melting chocolate
  1. In a microwave-safe bowl, combine dark chocolate chips and coconut oil.
  2. Heat in short bursts, stirring until the mixture is melted and silky.
Coating
  1. After the date layer has chilled, cut it into bite-sized pieces.
  2. Dip each piece into the melted chocolate, ensuring full coverage.
  3. Let the excess chocolate drip off before placing the pieces back on the parchment.
  4. Return them to the freezer for another 30 minutes to set.
