Ingredients
  

For the Filling
  • 1 cup Medjool dates, pitted
  • 1/2 cup creamy peanut butter (or any nut butter of your choice)
  • 1/4 cup roasted peanuts, roughly chopped
For the Chocolate Layer
  • 1/2 cup dairy-free dark chocolate chips (or regular chocolate)
  • 1 tablespoon coconut oil
Optional Toppings
  • Sea salt (for a sweet-salty finish)
  • Chopped nuts (almonds or walnuts work nicely)

Method
 

Preparation
  1. Rinse the dates and soak them in warm water for about 10 minutes if they're firm.
  2. Blend the dates in a food processor until smooth, scraping down the sides as necessary.
  3. Add the creamy peanut butter and mix until fully combined. The mixture should be sticky and hold its shape.
  4. Line an 8x8 inch dish with parchment and spread the date and peanut butter mix evenly across the bottom. Press down gently and sprinkle chopped peanuts on top.
  5. Place the dish in the freezer to set while preparing the chocolate layer.
Chocolate Layer
  1. In a saucepan over low heat, melt the chocolate chips and coconut oil, stirring continuously.
  2. Drizzle the melted chocolate over the peanut filling and sprinkle with sea salt if desired.
  3. Return the dish to the freezer for 30-60 minutes until set.
Cut and Serve
  1. Once firm, cut into squares and enjoy your Date Snickers!
