Preparation
- Rinse the dates and soak them in warm water for about 10 minutes if they're firm.
- Blend the dates in a food processor until smooth, scraping down the sides as necessary.
- Add the creamy peanut butter and mix until fully combined. The mixture should be sticky and hold its shape.
- Line an 8x8 inch dish with parchment and spread the date and peanut butter mix evenly across the bottom. Press down gently and sprinkle chopped peanuts on top.
- Place the dish in the freezer to set while preparing the chocolate layer.
Chocolate Layer
- In a saucepan over low heat, melt the chocolate chips and coconut oil, stirring continuously.
- Drizzle the melted chocolate over the peanut filling and sprinkle with sea salt if desired.
- Return the dish to the freezer for 30-60 minutes until set.
Cut and Serve
- Once firm, cut into squares and enjoy your Date Snickers!
