Ingredients
  

Pasta and Vegetables
  • 12 oz pasta (rotini or mini shells) Choose shapes that hold onto the dressing well.
  • 1 cup dill pickles, diced Plus some juice for added flavor.
  • 1 cup fresh cucumber, diced English cucumber stays crunchy.
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
Dressing
  • 1 cup mayonnaise Substitute with Greek yogurt for a lighter option.
  • 1 tbsp Dijon mustard
  • 2 tbsp dill weed Fresh or dried, depending on availability.
  • Salt and pepper to taste

Method
 

Preparation
  1. Boil pasta in salted water according to package instructions until al dente.
  2. Once cooked, drain and rinse under cold water to stop cooking.
  3. In a large bowl, combine diced dill pickles, cucumber, cherry tomatoes, and red onion.
  4. In a separate bowl, mix mayonnaise, Dijon mustard, dill weed, and a splash of pickle juice.
  5. Combine the cooled pasta with the vegetable mixture and pour in the dressing.
  6. Mix gently to coat the pasta with dressing and veggies.
  7. Chill in the fridge for at least an hour before serving.
