  • 0.75 cups unsweetened cocoa powder

  • 1.5 tsp baking soda

  • 2 large eggs
  • 1 cups whole milk
  • 0.5 cups vegetable oil
  • 2 tsp vanilla extract
  • 1 cups boiling water
Frosting Ingredients
  • 1 cups heavy cream
  • 4 cups powdered sugar
  • 1 cups semi-sweet chocolate for frosting

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large bowl, whisk together the flour, sugar, cocoa powder, baking powder, baking soda, and salt until combined.
  3. Add in the eggs, milk, vegetable oil, and vanilla extract. Mix on medium speed for about two minutes.
  4. Gently stir in the boiling water until fully incorporated. The batter will be thin.
  5. Divide the batter evenly between the prepared pans, and bake for 30 to 35 minutes.
  6. Let the cakes cool in the pans for about 10 minutes, then transfer them to wire racks to cool completely.
Frosting
  1. Melt the semi-sweet chocolate and allow it to cool slightly.
  2. In a large bowl, beat the heavy cream until soft peaks form, gradually adding in the powdered sugar.
  3. Fold in the melted chocolate until combined and smooth.
Assembly
  1. Place one layer of the cooled cake on a serving plate and spread frosting on top.
  2. Add the second layer and frost the top and sides of the cake.
  3. Optionally, add chocolate shavings or sprinkles on top.
