Ingredients

Main Ingredients
  • 1 cup creamy peanut butter or crunchy for extra texture
  • 1/2 cup unsalted butter melted
  • 1 cup powdered sugar you can also use coconut sugar for a slight caramel flavor
  • 4 cups mini marshmallows try flavored ones for a fun twist
  • 1 1/2 cups graham cracker crumbs or crushed gluten-free cookies
  • 1 teaspoon vanilla extract for that nostalgic essence

Method

Preparation
  1. In a mixing bowl, blend together the melted butter and creamy peanut butter until perfectly combined.
  2. Sprinkle in the powdered sugar and fold it in using a spatula until there are no lumps and it has a somewhat thick consistency.
  3. Pour in the mini marshmallows and the graham cracker crumbs. Stir gently but thoroughly, ensuring every marshmallow is coated with the peanut butter mixture.
  4. Line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal. Transfer the mixture into the dish and press down firmly.
  5. Smooth out the top using the back of a measuring cup and pack it evenly.
  6. Refrigerate for at least 2 hours to let the squares firm up before cutting.
  7. Once firm, cut into squares or bars as desired.

Notes

For a vegan version, swap the butter for coconut oil and use agave syrup instead of powdered sugar. Add a pinch of sea salt for a delightful contrast to the sweet flavors. You can freeze them for a refreshing treat on hot days.
