Easy Chicken Alfredo Lasagna Roll Ups

A fun twist on traditional lasagna, these roll-ups feature tender chicken and creamy Alfredo sauce wrapped in lasagna noodles, perfect for family dinners.

Lasagna Roll Ups Ingredients
  • 9 pieces lasagna noodles (no-boil or regular)
  • 2 cups cooked shredded chicken (rotisserie works great!)
  • 2 cups ricotta cheese
  • 2 cups mozzarella cheese (divided)
  • 1 cup grated Parmesan cheese
  • 2 cups Alfredo sauce (store-bought or homemade)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley, for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Bring a large pot of salted water to a boil. Cook the lasagna noodles according to the package instructions until al dente. If using no-boil noodles, skip this step.
  3. In a mixing bowl, combine the shredded chicken, ricotta cheese, half of the mozzarella cheese, Parmesan, Italian seasoning, salt, and pepper. Mix until well combined.
  4. Spread a thin layer of Alfredo sauce at the bottom of a large baking dish.
  5. Take a noodle and spread about 1/4 cup of the chicken and cheese mixture along its length. Roll it up gently and place it seam-side down into the baking dish. Repeat with the remaining noodles and filling.
Baking
  1. Pour the remaining Alfredo sauce over the roll-ups and sprinkle with the remaining mozzarella cheese.
  2. Bake in the oven for about 25-30 minutes, or until bubbly and golden on top.
Serving
  1. Let the dish cool for a few minutes before slicing. Top with freshly chopped parsley for color.

Notes

These roll-ups can be served with a fresh garden salad and garlic bread. They can also be assembled the night before and baked the next day.
