  • 1 cup uncooked white rice Can swap for brown rice, but adjust cooking time
  • 2 cups chicken broth Vegetable broth is an alternative for lighter flavor
  • 1 can (10 oz) enchilada sauce Homemade sauce is an impressive choice if you have time
  • 1 cup black beans, drained and rinsed Feel free to use kidney beans or omit for a gluten-free version
  • 1 cup corn, frozen or canned Sweet corn adds a touch of sweetness
  • 1 cup shredded cheese Mexican blend, Monterey Jack, or spicy pepper Jack
  • 1 tsp cumin
  • 1 tsp chili powder
  • to taste Salt and pepper
  • to taste Chopped green onions or cilantro for garnish Optional but highly recommended

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet over medium heat, add the shredded chicken, uncooked rice, chicken broth, enchilada sauce, black beans, corn, cumin, and chili powder. Stir until well combined.
  3. Bring the mixture to a gentle simmer, watching for bubbles around the edges.
  4. Reduce the heat, cover the skillet, and let it cook for about 20 minutes or until the rice is tender and has absorbed most of the liquid. Stir occasionally to prevent sticking.
  5. Turn off the heat, sprinkle half of the cheese over the top, and stir to mix the cheese in.
  6. Transfer everything to a greased 9×13-inch baking dish and spread evenly. Top with the remaining cheese.
  7. Bake in the oven for about 20-25 minutes, or until the cheese is bubbly and golden.
  8. Allow it to rest for about 5-10 minutes before serving.
