Preparation
  1. If using fresh corn, carefully cut the kernels off the cob.
  2. In a medium-sized skillet, melt the butter over medium heat.
  3. Once bubbly, add the corn and stir to coat it with the melted butter.
Cooking
  1. Pour in the heavy cream and add the sugar if desired. Bring to a gentle simmer, stirring occasionally.
  2. Simmer for about 10 minutes until the cream reduces slightly and thickens to cling to the corn.
  3. Season the mixture with salt and black pepper to taste. Optionally add a pinch of smoked paprika or cayenne pepper for extra flavor.
