- If using fresh corn, carefully cut the kernels off the cob.

- Once bubbly, add the corn and stir to coat it with the melted butter.
Cooking
- Pour in the heavy cream and add the sugar if desired. Bring to a gentle simmer, stirring occasionally.
- Simmer for about 10 minutes until the cream reduces slightly and thickens to cling to the corn.
- Season the mixture with salt and black pepper to taste. Optionally add a pinch of smoked paprika or cayenne pepper for extra flavor.
- Give the creamed corn a good stir and serve immediately.
