Ingredients

Main Ingredients
  • 4 pieces boneless, skinless chicken breasts (or thighs for more flavor)
  • 1 cup heavy cream (for a lighter option, use half-and-half)
  • 1/2 cup sun-dried tomatoes, chopped (oil-packed for richer flavor)
  • 1 cup chicken broth (low-sodium preferred)
  • 1 cup grated Parmesan cheese (or any cheese you love)
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh basil or parsley for garnish (optional)

Method

Cooking Chicken
  1. Heat a tablespoon of olive oil in a large skillet over medium heat.
  2. Season the chicken with salt, pepper, and Italian seasoning.
  3. Sear the chicken breasts for about 5-7 minutes per side until golden brown.
  4. Remove the chicken from the skillet and set aside.
Making the Sauce
  1. Add the remaining olive oil to the skillet, followed by the minced garlic.
  2. Stir for about 30 seconds until fragrant.
  3. Add in the sun-dried tomatoes and cook for another minute.
  4. Pour in the chicken broth and bring to a gentle simmer.
  5. Whisk in the heavy cream and let it bubble, stirring until slightly thickened.
  6. Fold in the grated Parmesan until melted and combined.
Finishing Touches
  1. Return the chicken to the pan, spooning the creamy sauce over each piece.
  2. Let simmer for a few more minutes until heated through.
