Ingredients
  

For the Pancakes
  • 1 cup all-purpose flour
  • 2 tablespoons sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup buttermilk (or milk with a splash of vinegar) Substitutions: use regular or non-dairy milk
  • 1 large egg
  • 2 tablespoons melted butter Plus extra for cooking
For the Cinnamon Filling
  • 1/4 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 2 tablespoons softened butter
For the Cream Cheese Glaze
  • 4 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1-2 tablespoons milk To desired consistency

Method
 

Preparation
  1. In a bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, combine the buttermilk, egg, and melted butter. Pour the wet ingredients into the dry and stir gently until just combined, leaving a few lumps.
  3. In a small bowl, mix the brown sugar and cinnamon for the filling, and set aside.
  4. Melt the softened butter for the filling and set aside.
Cooking
  1. Heat a non-stick skillet over medium heat and add some butter.
  2. Pour about 1/4 cup of the pancake batter into the pan and quickly swirl cinnamon mixture on top.
  3. Create a marbled effect using a toothpick or spoon. Cook until bubbles form and edges look set (about 2-3 minutes) before flipping.
  4. Cook the other side until golden brown and transfer to a warm plate. Repeat with remaining batter.
Garnishing
  1. For the glaze, beat the softened cream cheese until smooth, mix in powdered sugar, and adjust with milk for desired consistency.
  2. Drizzle the cream cheese glaze generously over the stacked pancakes.
