Preparation
- In a bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, combine the buttermilk, egg, and melted butter. Pour the wet ingredients into the dry and stir gently until just combined, leaving a few lumps.
- In a small bowl, mix the brown sugar and cinnamon for the filling, and set aside.
- Melt the softened butter for the filling and set aside.
Cooking
- Heat a non-stick skillet over medium heat and add some butter.
- Pour about 1/4 cup of the pancake batter into the pan and quickly swirl cinnamon mixture on top.
- Create a marbled effect using a toothpick or spoon. Cook until bubbles form and edges look set (about 2-3 minutes) before flipping.
- Cook the other side until golden brown and transfer to a warm plate. Repeat with remaining batter.
Garnishing
- For the glaze, beat the softened cream cheese until smooth, mix in powdered sugar, and adjust with milk for desired consistency.
- Drizzle the cream cheese glaze generously over the stacked pancakes.
