Easy Lemon Meringue Pie Tartlets

Ingredients
  

For the tartlet shells
  • 1 package pre-made shortcrust pastry (store-bought)
  • to taste Flour, for dusting (optional) Use as needed for rolling out pastry.
For the lemon filling
  • 1/2 cup freshly squeezed lemon juice (about 2-3 lemons)
  • 1 unit zest of 1 lemon
  • 1/2 cup granulated sugar
  • 2 large eggs, beaten
  • 2 tablespoons cornstarch
  • 2 tablespoons unsalted butter
For the meringue
  • 2 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 cup granulated sugar

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Roll out the pastry on a lightly floured surface to about 1/8 inch thick.
  3. Cut out circles using a cookie cutter or a glass and gently press them into a muffin tin.
  4. Poke a few holes in the bottom of each shell to prevent bubbling.
  5. Bake the shells for about 10-12 minutes or until golden brown.
Making the filling
  1. In a medium saucepan, combine the lemon juice, lemon zest, sugar, beaten eggs, and cornstarch.
  2. Stir over medium heat until thickened, achieving a smooth and creamy consistency.
  3. Remove from heat and stir in the butter until melted and well incorporated.
  4. Set the filling aside to cool slightly.
Preparing the meringue
  1. In a clean, dry bowl, beat the egg whites with cream of tartar until soft peaks form.
  2. Gradually add the sugar until stiff, glossy peaks develop.
Assembling the tartlets
  1. Once the pastry shells are cool, fill each one with the lemon filling.
  2. Generously pipe or dollop the meringue on top, swirling to create peaks.
  3. Bake the tartlets for an additional 10 minutes or until the meringue turns golden brown.
  4. Allow them to cool before enjoying.
