  • 2 cups mango puree (fresh or canned) You can use frozen mango slices to create puree if fresh ones aren't available.
  • 1 cup water Used to dissolve sugar and gelatin.
  • 1/4 cup sugar Adjust to taste.
  • 2 tablespoons unflavored gelatin For a vegan option, substitute with agar-agar.
  • 1/2 teaspoon lemon juice Optional, adds brightness to the flavor.

Method
 

Preparation
  1. Blend mango into a smooth puree. If using canned mango, pour it straight from the can and pulse in the blender.
  2. In a small saucepan, combine water and sugar over medium heat. Stir until sugar dissolves, about 1-2 minutes. Do not boil.
  3. Sprinkle unflavored gelatin over the water-sugar mix and let it sit for about 5 minutes to bloom.
  4. Gently heat the mixture again, stirring until the gelatin is completely dissolved and the mixture is clear.
  5. Remove from heat and mix in the mango puree and lemon juice.
  6. Pour the mixture into a mold or individual serving cups and refrigerate for at least 4 hours, or until set.

Notes
