Easy Mediterranean Shrimp Bowls

Ingredients
  

For the shrimp marinade
  • 1 pound shrimp (peeled and deveined) Use medium or large shrimp, fresh or frozen.
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
For the bowls
  • 1 cup cooked quinoa or couscous Or a grain of your choice.
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1 medium bell pepper (any color), diced
  • 1/2 medium red onion, diced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1 whole Juice of 1 lemon
  • Fresh parsley, for garnish Optional.

Method
 

Preparation
  1. In a bowl, whisk together olive oil, garlic powder, paprika, oregano, salt, and pepper.
  2. Add the shrimp to the marinade and let them soak for about 15-20 minutes.
Cooking
  1. Heat a skillet over medium-high heat.
  2. Add marinated shrimp to the skillet in a single layer and cook for about 2-3 minutes per side until pink and opaque.
  3. In the meantime, prepare quinoa or couscous according to package instructions.
Assembly
  1. In a large bowl, mix the cooked grain, cherry tomatoes, cucumber, bell pepper, red onion, and olives.
  2. Drizzle with lemon juice and toss gently to combine.
  3. Add the cooked shrimp and crumbled feta, and toss everything together gently.
