Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine flour, sugar, baking soda, baking powder, and salt. Mix until well blended.
- In another bowl, stir together crushed pineapple, oil, eggs, and vanilla extract.
Mixing
- Gently fold the wet ingredients into the dry until just combined, being careful not to overmix.
- Add the chopped pecans and gently mix them in.
Baking
- Grease and flour a 9x13 inch baking dish or line it with parchment paper.
- Pour in the batter and smooth out the top.
- Bake for about 30-35 minutes, or until a toothpick inserted into the center comes out clean.
Cooling
- Let the cake cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
