  • 1 cup quinoa (any color) Rinsed under cold water to remove bitterness
  • 2 cups water or vegetable broth For added flavor
Vegetables and Aromatics

  • 3 pieces green onions, chopped
  • 2 cloves garlic, minced
  • 1 cup mixed vegetables (like peas, carrots, bell peppers; fresh or frozen)
Flavorings
  • 3-4 tablespoons soy sauce (or tamari for gluten-free)
  • 1-2 teaspoons sesame oil (for finishing)
Optional Add-Ins
  • Cooked protein (tofu, chicken, shrimp) Optional for added protein

  • Fresh herbs (like cilantro) For garnish

Method
 

Cooking Quinoa
  1. Rinse the quinoa under cold water to remove bitterness.
  2. In a pot, combine the rinsed quinoa and water (or vegetable broth) and bring it to a boil.
  3. Once boiling, reduce the heat to low and cover. Let it simmer for about 15 minutes or until all the liquid has absorbed and the quinoa is fluffy.
Sautéing Vegetables
  1. While quinoa is cooking, heat oil in a large skillet over medium-high heat.
  2. Add the chopped green onions and minced garlic, stirring for about a minute until fragrant.
  3. Toss in the mixed vegetables and sauté until tender and vibrant.
Combining Ingredients
  1. Once the quinoa is cooked, fluff it with a fork and fold it into the skillet with the vegetables.
  2. Pour in the soy sauce and mix everything together.
  3. If using, add your protein now and drizzle sesame oil over the top, mixing lightly.
  4. Let it all meld together for another minute.
