  • 2 pounds beef chuck roast (or brisket, for a leaner option)
  • 2 cups beef broth (homemade or store-bought)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 8 ounces egg noodles (you can use whole wheat for a healthier twist)
  • 2 cups carrots, sliced (frozen works too!)
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish, optional)

Method
 

Preparation
  1. Cut the beef into large chunks and season generously with salt and pepper.
  2. In your slow cooker, combine the seasoned beef, diced onion, minced garlic, sliced carrots, and thyme.
  3. Pour in the beef broth and Worcestershire sauce, ensuring the meat is almost covered. Stir gently to combine.
Cooking
  1. Put the lid on and set your slow cooker to low for about 8 hours or high for 4 hours.
  2. About 30 minutes before serving, stir in the egg noodles.
  3. Check when the noodles are tender and ready to serve.

Notes
