Ingredients
  

For the sushi rice
  • 2 cups sushi rice (or short-grain rice) Rinse under cold water
  • 2.5 cups water For cooking rice
  • 0.25 cup rice vinegar
  • 2 tablespoons sugar For seasoning rice
  • 1 teaspoon salt For seasoning rice
For the salmon mixture
  • 1 pound fresh salmon, skinless Can be substituted with tofu for a vegetarian option
  • 0.5 cup mayonnaise Can be replaced with vegan mayo if desired
  • 2 tablespoons sriracha Adjust based on spice preference
  • 2 tablespoons green onions, chopped For flavor and garnish
  • 1 tablespoon sesame oil (optional) Adds flavor if desired
For serving
  • 1 sheet nori, cut into strips For serving with sushi bake
  • Pickled ginger Optional, for serving

Method
 

Preparation of Rice
  1. Rinse the sushi rice under cold water until the water runs clear, then combine the rinsed rice and water in a rice cooker or pot.
  2. Cook according to package instructions until the rice is sticky and tender.
  3. In a small saucepan, heat the rice vinegar, sugar, and salt over low heat until the sugar dissolves.
  4. Fold this mixture into the cooked rice gently to season it, then let it cool.
Preparation of Salmon Mixture
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine the fresh salmon, mayonnaise, sriracha, green onions, and sesame oil.
  3. Mix thoroughly using a fork until the salmon is evenly coated.
Assembling and Baking
  1. In a baking dish, layer the seasoned rice at the bottom evenly.
  2. Spoon the spicy salmon mixture over the rice, distributing it evenly.
  3. Bake in the preheated oven for about 20 minutes or until the top is lightly golden and bubbly.
  4. Let it cool for a few minutes before serving.
