For the Filling
  • 8 oz cream cheese, softened can substitute with vegan cream cheese
  • 1 cup shredded cheddar cheese or a Mexican cheese blend
  • 1 cup cooked and seasoned ground beef or black beans for a vegetarian option
  • 1 cup diced bell peppers red or green for crunch
  • 1/2 cup diced tomatoes fresh or canned, drained
  • 1/4 cup chopped green onions for that fresh zing
  • 1 tbsp taco seasoning store-bought or homemade
  • 1/4 cup fresh cilantro optional, for extra flavor
For the Wrapping
  • 2 large flour tortillas spinach or whole wheat for a colorful twist

Method
 

Preparation
  1. In a mixing bowl, blend the softened cream cheese with the taco seasoning until well combined.
  2. Stir in the shredded cheddar cheese, ground beef (or black beans), diced bell peppers, diced tomatoes, green onions, and cilantro until everything is evenly coated.
  3. Spread an even layer of the cheesy mixture over each tortilla, ensuring to cover the edges.
  4. Starting from one end, tightly roll up the tortilla, keeping the filling inside.
  5. Wrap each pinwheel tightly in plastic wrap and refrigerate for at least 30 minutes to firm up.
  6. Once chilled, remove from the fridge and slice the rolls into bite-sized pinwheels.
