Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine the almond flour, melted coconut oil, maple syrup, and salt. Mix until it resembles wet sand.
- Press the mixture into the bottom and up the sides of tartlet pans to form the crust.
- Bake the crusts for about 10-12 minutes until they turn light golden brown.
- Let the crusts cool.
Filling
- In a medium bowl, combine the chilled coconut cream, fresh lemon juice, lemon zest, maple syrup, and cornstarch.
- Whisk or use a hand mixer to blend until smooth and creamy. Adjust sweetness with additional maple syrup if desired.
- Once the crusts have cooled, pour the filling into each tart shell.
- Refrigerate the tarts for at least an hour to set.
Serving
- Remove the tarts from the fridge and top with fresh berries and mint leaves before serving.
