Ingredients
  

Main Ingredients
  • 6 large large eggs Can substitute with egg whites or egg substitutes.
  • 1/2 cup cottage cheese Or plain Greek yogurt for creaminess.
  • 1/2 cup shredded cheese Cheddar, mozzarella, or your favorite.
  • 3-4 tablespoons preferred mix-ins Options include cooked bacon, spinach, bell peppers, etc.
  • 1 tablespoon milk or cream Optional, for extra richness.
  • to taste salt and pepper To enhance the mixture.

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C).
  2. Mix the eggs in a bowl with cottage cheese (or yogurt) and milk until smooth.
  3. Season the mixture with salt and pepper.
Baking
  1. Grease a muffin tin or use silicone molds.
  2. Fold in your preferred mix-ins into the egg mixture.
  3. Pour the mixture evenly into each muffin cup, filling them about three-quarters full.
  4. Bake for 25-30 minutes, until the tops are puffed and lightly golden.
Serving
  1. Let the bites rest for about five minutes before gently popping them out of their molds.
