Ingredients
  

Salad Base
  • 6 cups fresh arugula Can substitute with spinach or mixed greens
  • 1 cup cherry tomatoes, halved Can use any favorite seasonal variety
  • 1 cucumber, diced
  • 1/4 cup red onion, thinly sliced Or green onion for milder flavor
Toppings
  • 1/4 cup walnuts, roughly chopped Can substitute with pecans for sweeter flavor
  • 1/4 cup feta cheese, crumbled Omit for a vegan option
Dressing
  • Juice of 1 lemon Or a splash of balsamic vinegar for tang
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Method
 

Preparation
  1. Rinse the arugula under cold water and dry using a salad spinner.
  2. Place the arugula in a large bowl.
  3. Slice the cherry tomatoes in half and dice the cucumber. Add them to the bowl.
  4. Thinly slice the red onion and add it to the bowl.
Toasting Nuts
  1. Heat a dry skillet over medium heat, add walnuts, and toss frequently for about 3-5 minutes until golden and fragrant. Allow to cool, then add to the salad.
Assembly
  1. Add crumbled feta cheese to the salad.
  2. Drizzle with olive oil and freshly squeezed lemon juice. Season with salt and pepper.
  3. Gently toss the salad until well-coated.
