  • 1 cup brown sugar (packed) Coconut sugar can be used for a less refined option.
  • 1/2 cup granulated sugar Can be substituted with maple syrup for a vegan version.
  • 2 large eggs For vegan, substitute with flax eggs.
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 2 cups rolled oats Use gluten-free oats if desired.
  • 1 cup chocolate chips
  • 1 cup M&M's (or other colorful candies) Use as a mix-in for added color and variety.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the peanut butter, brown sugar, and granulated sugar until thick and creamy.
  3. Add the eggs one by one, mixing well after each addition.
  4. Stir in the vanilla extract and baking soda until well blended.
  5. Fold in the rolled oats, chocolate chips, and M&M's gently until just combined.
  6. Using a cookie scoop or spoon, drop generous spoonfuls of cookie dough onto the baking sheet, leaving space between each.
  7. Bake for 10-12 minutes until set with a light golden edge; do not overbake.
  8. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
