  • 2 medium sweet potatoes (about 2 cups mashed)
  • 3 large eggs
  • 1/2 cup almond flour (or any nut flour of your choice)
  • 1/4 cup coconut sugar (or brown sugar)
  • 1/4 cup maple syrup
  • 2 teaspoons ground ginger
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • a pinch salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Cook sweet potatoes by boiling or baking until soft.
  2. Let the cooked sweet potatoes cool, then peel and mash until smooth.
  3. In a large mixing bowl, combine the mashed sweet potatoes with eggs, almond flour, coconut sugar, maple syrup, and vanilla extract. Stir until well combined.
  4. Add ground ginger, baking powder, and a pinch of salt. Mix until smooth.
  5. Pour the batter into a greased cake pan, spreading it evenly.
Baking
  1. Bake in the preheated oven for about 25-30 minutes, or until a toothpick inserted comes out clean.
  2. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack.
