Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour (or additional all-purpose flour for a lighter muffin)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup Greek yogurt (plain or vanilla)
  • 1/2 cup sugar (or honey/maple syrup)
  • 1/4 cup vegetable oil (can substitute with melted coconut oil)
  • 2 large eggs
Mix-ins
  • 1 cup fresh or frozen blueberries No need to thaw if using frozen.
  • optional cinnamon or nutmeg For added warmth.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C) and line a muffin tin with liners or grease it lightly.
  2. In a large bowl, whisk together the flours, baking soda, baking powder, and salt until well combined.
  3. In a separate bowl, combine the Greek yogurt, sugar, vegetable oil, and eggs. Mix until smooth and well incorporated.
  4. Gently fold the wet mixture into the dry ingredients using a spatula or wooden spoon, being careful not to overmix.
  5. Stir in the blueberries gently.
  6. Spoon the batter into the muffin tins, filling each cup about two-thirds full. Sprinkle a bit of cinnamon on top if desired.
Baking
  1. Bake in the preheated oven for about 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  2. Allow the muffins to cool for a few minutes in the tin before transferring them to a wire rack to cool completely.
