  • 1 tbsp Cornstarch
  • 1/4 tsp Salt
  • 1 tsp Lemon Juice (optional) Enhances flavor.

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C) and line a cupcake tin with paper liners.
  2. In a mixing bowl, beat the cream cheese with granulated sugar until smooth and creamy.
  3. Gradually mix in the egg yolks, milk, and vanilla extract until well combined.
Combining Ingredients
  1. Sift together the cake flour and cornstarch in a separate bowl, then slowly add them to the cream cheese mixture.
  2. In another bowl, whisk the egg whites with a pinch of salt until foamy.
  3. Gradually add a tablespoon of sugar and continue whisking until stiff peaks form.
  4. Gently fold the egg whites into the cream cheese mixture in thirds.
Baking
  1. Pour the batter into the lined cupcake tins, filling them about 3/4 full.
  2. Bake for about 20-25 minutes, or until they are puffed and lightly golden on top.
  3. Let the cupcakes cool in the tin for a bit before transferring to a wire rack.
