Ingredients
  

For the cookie base
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
For the chocolate filling
  • 3/4 cup semisweet chocolate chips
  • 1/4 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 2 tablespoons heavy cream
For topping
  • Whipped cream (store-bought or homemade)
  • Chocolate shavings or curls

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, cream together softened butter and granulated sugar until light and fluffy (about 3-4 minutes).
  3. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.
  4. In another bowl, whisk together flour, baking soda, and salt. Gradually add this to the buttery mixture until combined.
  5. Scoop tablespoons of dough onto the prepared baking sheets, spaced about 2 inches apart.
Baking
  1. Bake the cookies for about 10-12 minutes or until the edges begin to turn golden.
  2. Let them cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.
Chocolate Filling
  1. In a microwave-safe bowl, melt the semisweet chocolate chips in short bursts of 20 seconds, stirring in between until smooth.
  2. Mix in cocoa powder, softened butter, powdered sugar, and heavy cream until smooth.
Assembly
  1. Once cookies are cooled, spread a generous layer of chocolate filling on top of each cookie.
  2. Top each cookie with a dollop of whipped cream and sprinkle with chocolate shavings.
