  • 2 tablespoons unsalted butter Can be replaced with vegan butter for a plant-based version.
  • 1 tablespoon vanilla bean paste or 1 vanilla bean Using a vanilla bean will give lovely flecks and a richer flavor.
  • 1 pinch sea salt Enhances the sweetness of the sauce.

Method

Preparation
  1. Place a medium saucepan over low heat and pour in the heavy cream.
  2. Let the cream warm gently, adding the granulated sugar and stirring until it dissolves completely.
  3. Add the unsalted butter and stir until it melts into the sauce.
  4. Introduce the vanilla bean paste or the scraped seeds from the vanilla bean.
  5. Sprinkle in the pinch of sea salt and let the sauce simmer on low heat while stirring occasionally for about 5 minutes.
  6. Once the sauce thickens slightly and coats the back of a spoon, take it off the heat and let it cool for a few minutes.
